Was going to go to Islay but ferry to Port Ellen was problematic and all to Port Askaig were full... still nice island

I can recommend The Stonefield Castle at Tarbert, Skeabost Hotel in Skye, Applecross Inn, Tulloch Castle in Dingwall, Highly recommend the Kylesku Hotel, The Tongue Hotel and The Newton Hotel Nairn.
The Stonefield, Tulloch, Newton and Skeabost are Oxford Inns and 4* traditional castles, manor houses, hunting lodges.
The Kylesku Hotel is a small hotel but stunning scenery.
The Applecross Inn is small but extremely popular.
If your folks like modern hotels then these won't likely suit.
